JOURNALING: During my sister’s recent visit from Florida, we took a cooking class at Sur La Table and learned to make pocket pies. The next day, we decided to practice what we had learned. We made the dough and formed the pies. Then we experimented with our own filling. We cooked up some seasoned ground chuck and filled the pies. They looked really nice after baking. We added a home-made cheese sauce and a little garnish and, voila!
Cheeseburger pocket pies!

Those really look yummy. Reminds of when I took a Japanese Cooking class, that met once a week, for several weeks. Had totally forgotten about it over the years. Thanks for rekindling a good memory. Also I'm going to give your pies a try.
